american style breakfast pancakes






Before going on a diet, one of my favorite weekend breakfasts was pancakes. I like the leisurely feel of cooking in the morning when you don’t have to rush off to work, and there is something really satisfying about a stack piled high with fruit and maple syrup.
I looked around on various forums for a diet friendly option, and tried a few recipes. However, nothing quite hit the spot, and lots of recipes seem to either use huge amounts of egg or involve faffing about with mullerlights (since they contain sweetner, I am trying not to go overboard with them).
So, as ever, I messed around in the kitchen, with my slimming world handbook to one side, and came up with these beauties. Whether you are on a diet, looking for wheat-free pancake options or just want to try something new, these lovely tasty pancakes are well worth trying. They are full of goodness and virtually ‘syn free‘ on slimming world.
I use readybrek (a ‘healthy extra’ B) instead of flour, but the pancakes have a lighter taste than other oaty pancakes that I’ve tried. They also use 50ml of semi-skimmed milk which I take from my ‘Healthy Extra A’ portion.

For the pancakes:
  • 28g ready brek
  • 50ml semi skimmed milk
  • 1 egg
  • 1/2 tsp baking powder
  • 2 dessert spoons of cold water

Method:
  1. Measure 28g Ready brek into a bowl and add 1/2 teaspoon of baking powder. Mix thoroughly
  2. Beat an egg and add it to the milk
  3. Add the milk and beaten egg to the ready break and mix well.
  4. Add the water if it looks too thick
  5. The mixture should be slightly thicker consistency than normal pancake batter (the lack of flour makes it a bit more delicate)
  6. Spray a frying pan with frylight
  7. Fry the pancakes on both sides in small rounds. you may need to spread the mix a bit in the pan as it wont flow as well as normal batter. Cook until they puff up and are firm and bouncy to the touch.
  8. The mix should make 3 small pancakes perfect for stacking!
Toppings
I have tried these with chopped banana, raspberry, yogurt and today with chopped apple, quark and cinnamon. Basically- anything goes. I often add 1tsp of maple syrup, which is just one syn and totally worth it! If you wanted to go all american, you could add lean bacon to the side.
